    • I kg Mutton
    • 1 tbsp red Chili powder
    • 2 tbsp Coriander powder
    • 1 tsp Turmeric powder
    • Salt to taste
    • sprigs of curry leaves
    • 1 tsp Ginger Paste
    • 1 tsp Garlic paste

    For Seasoning:

    • 1 tsp Mustard seeds;
    • a sprig of curry leaves;
    • 2 large Onions finely sliced;
    • 4 green chillies – deseeded & cut lengthwise
    • 2 inch piece ginger, thinly sliced
    • 4-6 tbsp Oil

    To Make a Powder:

    • 2 tbsp Pepper corns
    • 1 tbsp Sombu – (broil the Sombu leave to cool add to the pepper corns & powder & keep)

    For Garnish:

    • Chopped Coriander leaves

    Step 1

    Wash mutton pieces put in pressure cooker add ginger-garlic paste, chilli powder, corriander powder,turmeric powder,curry leaves and salt.

    Cook for 40 on low flame.

    Step 3

    Remove from heat and leave to depressurize on it’s own.

    Step 4

    Take a deep wok and add oil.

    Step 5

    When oil is hot add mustard seeds and curry leaves – once the mustard seeds crackle add the finely sliced onions and fry till onions are brown.

    Step 6

    Add green chillies and ginger pieces and fry on low flame for 2 mins.

    Step 7

    Now add the cooked mutton and the soup.

    Step 8

    Mix well and leave to cook till all the soup is absorbed and the fry is dry.

    Step 9

    Remove from the flame. Mutton Pepper Fry is ready to serve.

    • 1 teaspoon dry coriander powder

    • 4 cloves
    • 1 big cardamom

    • 1/2 teaspoon mace and nutmeg powder

    For Garnishing:

    • few blanched almonds
    • green chilies

    For Smoke:

    • a piece of coal
    • aluminium foil
    • few drops of oil

    Heat oil in a deep pot over medium heat.

    Step 2

    Fry onion for 8-10 minutes or until golden brown.

    Step 3

    Remove from the oil and crush them.

    Now fry chicken in the leftover oil.

    Add ginger and garlic paste and all the ingredients expect yogurt and fried onions.

    Step 6

    Cook few minutes until gravy is cooked thorough.

    Now add yogurt and fried onions and fry well until chicken is tender and gravy done.

    Then take a burning coal and put on top of an aluminum foil.

    Step 9

    Pour few drops of oil on it. Cover the pot with the tight lid.

    After a while take out the coal piece.

    Step 11

    Keep on low flame to cook when oil comes on top.

    Dish it out. Garnish with almonds. Smoked Chicken Korma is ready to serve.

    Remove the crusts from the bread.

    Karahi Gosht (Mutton Karahi)

    Karahi Gosht (Mutton Karahi) is a simple yet delicious kind of fried meat with thick tomato gravy. This is a wonderful dish which will make your day and the best thing is that onion is not added in it. It is made with traditional Pakistani spices, tomatoes, yogurt and salt.

    Ingredients

    • 1 kg mutton cut into pieces
    • 4 to matoes peeled and blended
    • 1 cup plain yogurt
    • 1/2 cup cooking oil or desi ghee
    • 2 tablespoon ginger garlic paste
    • 2 tablespoon lemon juice
    • 1 tablespoon papaya paste
    • 2 teaspoon red pepper
    • 1 teaspoon coriander powder
    • 1 teaspoon cumin powder
    • 1 teaspoon garam masala powder
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon black pepper
    • salt to taste

    For Garnishing

    • 4 green chilies thinly sliced
    • 1 to mato cut into rings
    • 2 tablespoon chopped coriander
    • few lemon rings
    • 1 inch piece of ginger thinly sliced
    • Salt to taste

    Instructions

    Method

    • Wash meat and pat dry.
    • Boil mutton with salt until half done and keep its stock aside.
    • Put boiled mutton in a large bowl. Add yogurt, ginger garlic paste, red pepper, black pepper, cumin powder, coriander powder, turmeric powder and papaya paste. Mix well.
    • Cover and marinate for 2 hours to blend flavors.
    • Heat oil in a deep karahi or wok over medium high heat. Add blended tomatoes and marinated meat. Cook and stir for 25 minutes or until meat is tender and all water dries up.
    • Sprinkle with garam masala and coriander leaves. Cover and and simmer for 5 minutes.
    • Garnish with green chilies and ginger and lemon. Delicious Mutton Karahi is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve hot with naan bread and salad.

    For filling:

    • 1 kg paneer
    • 3/4 cup milk
    • 1/2 cup sugar

    For Samosa dough

    • 1 cup plain flour
    • 1 tablespoon fine Rawa
    • 1 tablespoon melted Butter
    • 1-1/2 teaspoon powdered Sugar
    • oil for deep frying
    • Honey to glaze samosas
    • Almonds, thinly sliced for decorating

    Directions:

    Step 1

    Crumble paneer and mix with milk blending both well with hands.

    Step 2

    Add sugar and knead it for few minutes.

    Step 3

    Heat this on a skillet in medium flame stirring constantly for 1 or 2 minutes till sugar melts completely.

    Step 4

    Remove from fire and allow it to cool.

    Step 5

    Mix fried nuts to this mixture and keep aside.

    Step 6

    Sieve plain flour with baking powder twice. Add a pinch of salt, rawa, powdered sugar to flour and mix well in a bowl.

    Step 7

    Add melted butter.

    Step 8

    Sprinkle water and knead it gradually to a thick dough.

    Step 9

    Ensure the melted butter is at room temperature. Keep aside for 1/2 an hour.

    Step 10

    Knead well again till the dough becomes pliable and soft.

    Step 11

    Make small balls and roll it into thin circles.

    Step 12

    Keep 1 tblsp of filling inside and fold it in the center and seal the edges with little water.

    Step 13

    Using a samosa cutter cut the edges or shape it with hands like a plait.

    Step 14

    Deep fry on low heat for 5-7 minutes or until crisp.

    Step 15

    Drain on paper towel. Brush honey on top and decorate with roasted almonds. Paneer Samosa is ready to serve. Enjoy!

    Ingredients:

    • 250 gms all purpose flour
    • 1 cup Water
    • Pinch of chilli powder
    • 500 gms potatoes
    • 100 gms green peas
    • 2 onions chopped
    • 6 green chillies chopped
    • 1 bunch cilantro (coriander) washed and chopped
    • 2 tsp lemon juice
    • 1 tsp ginger garlic paste
    • 1 tsp coriander seeds (dhaniya) powder
    • Pinch of turmeric
    • Oil for frying
    • Salt to taste

    Yield: 8 servings

    Directions:

    To make the Aloo Samosa filling:

    Step 1

    Boil the potatoes and mash them (not too soft).

    Step 2

    Take a sauce pan add a tbsp of oil. Once the oil is hot add chopped onions and green chilies.

    Step 3

    Fry the onions till golden brown and add ginger garlic paste and a pinch of turmeric After a minute add green peas and potatoes previously mashed. Mix them well.

    Step 4

    Add lemon juice, dhaniya powder and salt. Mix it well and let it cook for 10 min on low flame Garnish it with cilantro. Allow to cool and set aside.

    To make Samosa:

    Step 1

    Take the flour in a bowl, heat 3 tbsp oil add it with salt to the flour.

    Step 2

    And kneed the mixture into dough by adding water gradually and set it aside for 30 min.

    Step 3

    Now divide the dough into 10 equal parts, make them into round flat balls

    Step 4

    Roll each ball into a chapatti (medium thick) then cut it into 2 equal semi circles.

    Step 5

    Fold the semi circle into half and seal one side with water making a triangle pocket

    Step 6

    Now stuff it with filling and seal the other side with water again. Keep the oil ready for frying in a wok

    Step 7

    Fry the samosas in oil on medium flame till they are golden brown. Make sure the side are sealed properly before putting the samosas in oil.

    Step 8

    Remove from the oil and drain on kitchen paper. Aloo Samosas are ready to serve. ENJOY!!

    • Serve with green chutney or imli chutney.

    Add the meat and stir well over a medium heat to seal and evenly brown the meat pieces.

    Keep stirring until the oil separates. Cover and cook for about 20 minutes.

    Add the coconut milk, mix well and simmer until the meat is cooked.

    Towards the end of cooking, uncover the pan to reduce the excess liquid. Garnish with corainder leaves. Hot Dry Meat Curry is ready to serve. ENJOY!!
